I noticed this too so I made a new email field that didn't do this. 

My aim was to have control over who received emails rather than it being assumed ...

The Email fields and his box of " sends to the administrator " is always blocked (impossible to unselect)

I went to phpmyadmin to see if I could the unselect. Without success.Discouraged, so I put a fake email address for the administrator. Result: each visitor message, cel create an (empty) article in Joomla.

Someone managed to deselect this field to send to the administrator?

I don't understand that the people of Seblod do not inform on this simple manipulation despite my reminders. (maybe do part of the club)

It's the default behavior of any standard multi-select field and one reason why we don't like it. We prefer the checkbox field (with scroll or not) and we will see to change in future.

This is what happens in Joomla by default when you don't have a field to specify article title. You can add it and using conditionals and/or computation rules set some other field to fill it.
