This guy seems to indicate I can simply put my image URL, but that doesn't work. I also tried putting in <img src="/..."> but that didn't work either.

Hi Eoin,
This method only applies to the content view, item view or list view. It involves using the HTML typography to alter your field's output. Note: your field must have a stored value, otherwise there is no output and thus, nothing for the HTML typography to override.
Yes, you will need to put proper HTML image markup around your image URL.
