The path is defined in the field_x.php file. The icons are located:

/plugins/cck_field/field_x/assets/images/del-default.gif

/plugins/cck_field/field_x/assets/images/add-default.gif

/plugins/cck_field/field_x/assets/images/drag-default.gif

Note that these icons may be overwritten when new SEBLOD updates are applied.

I know, it happened to me, that is why I ask how I would cutomize these without loosing my cutomization on every update.

The developers will have to add this feature.  You can add your request to the Tracker or contact Octopoos directly.
