for what are this fields. Can it be used for internal documentation? (Just accessible over Backend?)

Answer: Yes you can use the description for documentation purposes and as well as tooltip. Just set up the correct output.

and do you know how we can parse the content of the description with the content plugins ?

for example how can we use Jtext in a description please ?
