There is a new version of Seblod 4, Seblod 4.2.0, inline since december 8. But this update is not proposed in backoffice of my site.
In updating sites list for update, there is SEBLOD 3.x Core Updates, but no SEBLOD 4.x Core Updates
It's perhaps the problem ?
May I do the update with installing new version on the older ?

There are three versions later than the one you have installed. So I recommend you to download and update it to 4.2.1. Of course, making a backup before and that kind of things.

Yes, just download and install through the Joomla extension manager, as if it were a new extension.
