I have two different lists assigned to two different menu items. Both lists display the exact same information. How do I get the lists to display articles from a specific category or categories?

you have not really provided enough information to understand.
it would appear you have not setup a field in the 'search form' column in List and Search type.
there is not one solution and maybe good to go back and look at documentation and videos.

Just publish the Article Category ID field to the Search Form view of your search type. Then in Live value, enter your category id (you can click the little arrow on the right to find it). If you want to list more than one category, separate with a space.
